Meal Prep

I am SO HAPPY to say I'm getting back to finding routine after a year and a half of chaos (COVD, moving, changing jobs, renovations, etc...) and a big part of routine for me is meal prep.


It's also something that I haven't done in awhile, but it makes weekday eating so much easier. It also helps to do this with my Bestie- cuts down the stress and time to cook and pack by a considerable amount.


First thing I did was get new tupperware- the old stuff was a bit of a busted hodgepodge, and I'd been meaning to swap over to glassware for awhile now. So I got a bunch of Target's pyrex pieces and then it was off to the grocery section.


I get really bad anxiety in grocery stores (not nearly as bad recently as I did about two years ago) but that decreases quite a bit with someone else with me. So meal prep and grocery shopping with a friend makes a BIG difference.


Also it helps to have two people searching for ingredients and double checking nothing is forgotten :)


For this first week, we made:

Overnight Oats for breakfast- raspberry & almond butter and then banana, blueberry, & peanut butter ones

Chicken burrito bowls for lunch - chicken, rice, peppers, black beans, hummus, cilantro, lettuce


And then a few snacks that are mostly fruits and veggies


(Dinners are with our families, the meal prep is more for eating and eating better during work hours)





Total grocery time: maybe an hour?

Total prep time: About an hour and a half?



I feel great and a lot more focused throughout the week. It's nice not relying on eating junk or expensive delivery. We are hoping to do this each week, it helps so much with busy schedules and indecision when hungry.


We're over a month into this now, and it's gone extremely well. There are definitely days where I stray and order in, but it's really nice having a default ready and be a healthy option. We've gotten pretty good about doing the prep efficiently as time goes on too.


It also feels faaaaantastic to have a routine going again.
